Myron Mixon, cooking school teacher and winner of many competitions, provides great barbecue recipes in Smokin'. If you follow his instructions, you will be able to grill meats and fish like champion pitmasters.

Mixon's cookbook also includes ideas for side dishes, desserts and drinks to go with your backyard barbecue.

How to smoke meat

Entertaining and informative, the author introduces each chapter and recipe with lessons on everything from selecting the best BBQ cooker to what to do with burnt brisket ends (cube, add pan drippings and smoke).

Organized by food category, this 170-page book provides many easy ideas for family meals and special events. Tips provide additional information, like how to use a dip of half vinegar sauce and half water to keep BBQ meat moist.

Grilling vs barbecuing

At the front of Smokin', Myron Mixon answers questions, e.g., what is the difference between grilling and barbecuing? (Grilling is cooking food fast at high temperatures, while barbecuing is cooking and smoking food at low temperatures.)

His tips include what type of wood to use. (Fruit woods add flavor and, unlike hickory wood and oak, don't coat grills with impurities.)

Many of Mixon's recipes include his father's Jack's Old South sauces as ingredients (Jack's Old South Vinegar Sauce, Hickory Sauce and Huney Muney Cluck Rub). Mixon provides substitute recipes for these BBQ marinades and rubs.
