This Nava Atlas cookbook is a 247-page collection of 160 healthy, tasty and appealing vegan and vegetarian recipes that can be prepared in 30 to 45 minutes.
The introduction to each chapter of Vegan Express includes cooking shortcuts, nutritional information for the vegetarian ingredients and ways to combine dishes in the cookbook to create a complete meal.
Each vegan recipe lists the number of calories, total fat content, amount of protein, carbohydrates, fiber and sodium. Menu suggestions recommend other recipes from the cookbook to serve with the dish.
Eight full-page color images illustrate some of the vegan dishes.
A foreword by Neal Barnard, MD, and President of Physicians Committee for Responsible Medicine, encourages readers to try the vegan diet as a healthier approach to eating.
Substitutes for meat
The Vegan Express introduction discusses vegetarian and vegan ingredients. For example, readers learn about tofu, tempeh (a fermented soy product), seitan (pure wheat gluten) and tofurky sausage (a tofu and wheat gluten meat substitute).
Sidebars provide tips like easy ways to dress up grains and speedy ways to prepare tofu (sauteed tofu, barbecue flavored skillet tofu, teriyaki tofu steak and cornmeal crusted tofu).
